Ethyl gallate is a food additive with E number E313. It is the ethyl ester of gallic acid. Ethyl gallate is added to food as an antioxidant. Though found naturally in a variety of plant sources including walnuts Terminalia myriocarpa or chebulic myrobolan, ethyl gallate is produced from gallic acid and ethanol.

Description: White to off- white crystalline powder, odorless.
Solubility: Very slightly soluble in water, freely soluble in   ethanol (96 per cent). It dissolves in dilute solutions of alkali hydroxides.
Melting Point: 149C to154C.
Appearance of Solution: The solution is clear and not more intensely colored than reference solution.
